You can do this. But you need to use rethinkdns and download the configuration of the proton vpn wireguard server(s) you wanna reach. You can have internet blocked for individual apps, have some tunnel without VPN but DNS and firewall protection and some go through servers of proton (even per app to different servers). It’s a powerful tool. You won’t get the same protection as you would get with let’s say GrapheneOS but you are getting damn close to it if done right
Interesting idea, a DNS filter won’t do much for traffic pointed at a specific IP though. Curious how that would set the system wide DNS without being a root level app.
Rethinkdns is probably your best bet! Right now they are missing an important feature where It takes wireguard’s DNS configuration into account, making it obsolete for those who have private dns in a local environnement with an upstream dns !
The apps you want to block entirely, you can go into Android settings for each of them individually, and turn off all their Mobile Data & WiFi access options.
Apps that you want to allow outside Proton VPN, you can add to the Split Tunneling list in Proton VPN. But you have to turn off the Block Without VPN option.

one of your rights under gdpr is that you are entitled (free of charge) to a listing of all the data the other party has about you.
when you ask them about this listing this request itself becomes data the party has about you. it should therefore he included in the listing. (it is self referential, but that’s how it is).
if the information that you requested such a listing is missing from the data they provide in response to you request, they are in breach of gdpr rules. from them on you might want to file a complaint.
( I’ve no idea whether this would result in any meaningful compensation, if at all. but at least it should keep them busy.)
Regarding your question: Firefox Sync is end to end encrypted, so you don’t have to worry about it. It’s far better than Google’s browser sync, as it’s encrypted at all (only in transit, but this is standard and it means that Google can still see all of your data)
Since your post is in the privacy community, I have to say that I would never ever use any softwares from Microsoft for my own projects, not even open sourced and self-hosted ones. Everyone knows that Microsoft love to collect data and so do Google too, and Clarity uses Google Analytics.

As for typing, a quick search, apple support claims that the keyboard cache is only used for autocorrect purposes. How often you use a word and how you like to spell it.
Having it function as a keylogger would give them a headache, from data use, battery life, hackers exploiting it, etc.
And of course the warnings seem targeted at third party keyboards who can add on extra feature beyond IOS barebones.

Chances of that though are unlikely. Both are more worried about short term things. For China spotting dissent and trends on the fly. For Facebook selling ads more accurately.

Doesn't always work. Phones can turn themselves on. You can't remove the battery anymore either.
Personally, I just accept that my privacy will always be violated using a smart phone, especially because I'm forced to use google and whatsapp. But I leave my phone at home when possible, especially if I'm thinking of attending a protest or doing stuff, and chuck it in a muffled/closed draw when I'm not using it.
it seems like you merely need to disable the “Block connections without VPN”.
Then in your android settings there should be a toggle to deny network access to certain apps in the android permission settings. so the apps that are split tunneled you can just deny or allow network
