It doesn’t make you anonymous. Torrent protocol wasn’t designed with anonymity in mind and there are a million ways you’re going to leak your actual IP address....
I’d err on the side of caution. I always use a VPN for privacy reasons, my ISP doesn’t need to know what websites I’m visiting and which P2P protocols I use. Also, there’s no need to expose my approximate geographical location to every service I connect to.

I will never understand why people liked Windows XP, I’d rather use Gentoo Linux from 2002 compiled from a stage 1 tarball than this steaming pile of shit. Windows 7 was solid, but 10 was (again) the biggest piece of garbage. Horrible UWP UI, Cortana, the garbage Windows Store, the Windows Phone integration, the useless Xbox app, the shitty version of OneNote, crappy MS Edge, Candy Crush ads in the fucking start menu and tons of data collection. If you plan to get a new phone, get a Google Pixel and install GrapheneOS on it. By default, it doesn’t have any Google spyware services. It also has substantial security improvements compared to normal Android. It’s probably the most private and secure mobile operating system that currently exists.

Don’t. Don’t install Google spyware on your phone and don’t give this garbage company even a fraction of a cent. Also, stop pretending that it’s impossible to block ads on YouTube, there are many ways to do it: There are web clients like Piped and Invidious, there is FreeTube for Desktop and on Android you can use LibreTube (client for Piped), NewPipe, NewPipe x SponsorBlock, it also has Return YouTube Dislike built in, or Grayjay. On iOS, you can use Yattee, just follow this guide to set it up, it should also work on the Apple TV if I’m not mistaken, or just add the Piped website to your homescreen. If you have a device that runs Android TV, you can use SmartTubeNext.

I use Vanadium for high-security tasks, but Mull is my default browser for standard browsing. It has better privacy, because it has built-in anti-fingerprinting mechanisms and you can actually install proper adblockers like uBlock Origin. Also, I don’t want to support Google’s monopoly on browser rendering engines by using a Chromium-based browser, so I prefer Mull which is based on Gecko.
In terms of security, Vanadium is better than Mulch. Mulch uses some of the patches of Vanadium, but it lacks many security improvements that are present in Vanadium. My current setup is Vanadium for tasks where high security is very important, and Mull for just standard browsing.

Why would Signal stop accepting European phone numbers? It’s not like they want to leave the EU, they can just continue offering their services to EU users, but they can’t have servers or offices or any legal entities in the EU if they get banned. That’s not such a problem, you can access Signal over the internet from anywhere in the world, and if EU states start blocking Signal, you can still use Signal TLS proxies, good old VPNs or Tor. Edit: Signal is also banned in Iran, but they of course accept Iranian phone numbers, as they don’t impose the ban, the Iranian government does. You don’t really have to worry about this, I’m sure Signal will do everything in their power to continue to operate, even in jurisdictions in which it’s banned.
