Stick with Fedora and Nobara, they are good distros. I use Arch myself, because I like that bleeding edge, bro - but if those other distros are working for you, there’s pretty much no reason for the average person to switch.
It’s usually pretty easy to find secondhand Microsoft Surface devices for that price point (check craigslist, FB marketplace, and the like), and they absolutely rock when using a Gnome-based distro (like Fedora).

A desktop environment (“DE”) is separate from the compositor (X11 or Wayland), but can’t exist without it.
At the end of the day, a DE is really just a “window manager” with a bunch of bundled applications, like taskbars/panels, a file manager, an app menu, etc. It’s as minimal or as feature rich as you want it to be.
The window manager dictates what to draw on the screen and where, but the compositor is what actually does the work. One is kind of useless without the other.
Hopefully that makes sense, I’m not a rocket surgeon.
Nobara is a great suggestion by @el_gringo_loco, but I’d also throw out a suggestion for Bazzite if you want the “SteamOS”/Steam Deck experience.
It does have the KDE desktop environment underneath to do all the non-gaming stuff as well, but if gaming is your number one focus, it’s a pretty cool setup.
Get at least 30-60 minutes of sunshine/natural light a day
Get 30 minutes of exercise daily (even if it’s just a walk)

What the meme is referring to is actually called Circadian rhythm, it’s the different stages of sleep that is referred to as the sleep cycle. In a nutshell, you usually go from lightest sleep, to deepest, then back again every ~90 minutes.
If you respect this cycle, you will be able to retrain your circadian rhythm fairly easily.
Your brain is flooded with the chemicals that make you feel “tired” during the deep part of sleep, so if you use a traditional alarm clock and get woken up at that time you’re going to feel like shit.
Either wake up “naturally” (no alarm), or you can use one of those sunrise alarm clocks that emulate the light from the rising sun in your room and allows your brain to “warm boot” vs a jarring “cold boot”.
