Uses: similar to how I used instagram a long time ago, but I wish I could see more friends on it. Right now it’s mostly creatives and photographers

Eventually you might find that you’re coming back to the PrivacyGuides.org page, that’s what most people recommend these days as a starting point for recommended tools. There are a lot of companies out there advertising privacy and security without actually PROVIDING privacy and security. It’s becoming a new buzzword
The problem is that other people will be unfamiliar with it. Unless OP can be the support person all the time, the grandparents may want to get help from someone else.
Keeping things stock is helpful for that, and I feel like Google Pixel is already simple enough. Just disable things like assistant during setup or in settings.
