100%. I’m still going to TRY making homemade for a challenge eventually, but when Costco sells perfectly good ones… Why would I make them other than as a project?

I really enjoy making laminated dough and find it’s just a bit of work here and there but never a lot at once. Similar to bread baking.

Was gonna throw Dominique Ansel’s crepe process up, it’s what I use now. Grew up making crepes this way with my Mennonite grandma (minus the pan caramel), but the way he mixes the dough is a lot smarter to not have any lumps.

Corn tortillas. It’s a lot easier to just buy some.

I disagree on this one, corn tortillas are really simple if you have a press. The dough is literally just mix masa and water. And to cook them, you just put it on a hot surface for 30 seconds. Meanwhile corn tortillas from the store are always so dry and tasteless, they’re rarely worth buying

I agree a lot of commercial corn tortillas are not good. I particularly don’t like the fake-soft ones that have dough conditioners and preservatives for no reason. But with as much cooking as I do, I can’t bring myself to make tortillas when I make masa - I always end up doing pupusas, arepas or tamales. My main use of corn tortillas is enchiladas casserole style so homemade ones are kind of pointless since they 75% disintegrate.

Yup I can’t find anything in the stores that compares and I don’t mind making them. Really only do this in the summer when there’s some garden ingredients though, with a ground meat or bean sauce for protein.

I’ve always liked morrocan pancakes, which are also a layered type of food, so decided to make them myself one day. So much much work for something that doesn’t taste at least half as good as the ones from the bakery… Never again I told myself!

Store bought laminated dough is perfectly fine and freezes well. I don’t mind making it because I find it’s just a few minutes every so often, but I was lucky enough to learn the technique such that I don’t have to think about it. Use case for making your own is you can use a specific flour or butter and fresh baked pastry is the best.

I had my holiday time off canceled for the second year in a row, but I can’t even do any work because the customer that threw their problems at us while they’re on vacation didn’t provide enough specifications.

During my standup yesterday we literally determined I don’t have any work to do. Thanks boss.

I was writing my resignation in my head all weekend instead of enjoying my holiday.

It’s the customer’s responsibility to define the nature of the issue. People in support aren’t magic if you provide no details and then become non-available then that’s a customer problem.

Christmas morning my phone broke (shutoff at >50% and wouldn’t turn on at all). The day before a flight. When all of the stores to get a quick replacement were closed. And the only way I could get any info about my flight was by having my email’s 2FA keys, which were on my broken phone, and the only backup was on my desktop, which was 500km+ away.

Had to walk our catsitter through sending me the backup, and then rush to a retailer this morning to buy a replacement before my flight. Was not a fun experience, or a fun way to spend all of my Christmas money 😅

That 2fa is proper garbage when your phone breaks. My wife’s phone broke, and I couldn’t get her authorized on the new phone bc 2fa. I logged into a desktop that she was logged in on, got the code and everything, but that apparently wasn’t good enough. Needed to be able to respond to a text on the phone that didn’t work, or wait 48 hours before customer service could do anything.

Same thing with find my device. Usually, when you want to find your device, you’re not going to have your device on you. If you lose your phone in a public place now, you’re fucked until you can get back to another device you’re logged in on. Wife also lost her phone on a trip. Here, use mine to log into your account and track it. Nope, need 2fa to get into find my. Like, I’m low-key tempted to just turn it off and be less secure after having 2 shit experiences as a result of it. I won’t because security and all, but damn.

Google used to have an app called Trusted Contact where you could designate someone as a “trusted contact” and they could request your location. You’d get a notification for the request and if you don’t respond in 5 minutes, the location is automatically shared. This way you weren’t always sharing your location with someone and would know if they are trying to see your location. This helped me a few times finding my phone from my SO phone, without needing to log into account with 2FA

This kind of thing is why I still print out all the travel related stuff when I’m going anywhere.

Having that paper copy in my pocket as a backup gives me a lot of peace of mind.

My wife takes the piss out of me for turning every task into a spreadsheet, but who ate a perfectly cooked, stress-free Christmas dinner exactly when it was supposed to be ready? We all fucking did, that's who.

As a fellow spreadsheet nerd, can you explain your plan of attack? Like, how many dishes and how varied are the cooking temps/times in order to make everything come out of the oven and off the stove in time? And do you account for variables like washing utensils for reuse and/or operator error? I’m so uncoordinated in the kitchen that I can turn a 45 minute recipe into a 90 minute recipe just because I’m scrambling to find the right spices or washing utensils between uses or I spend too much time measuring things with absolute precision.

If I could plot out the entirety of the process in a series of Excel tables, I might actually be able to cook a meal efficiently.

    love this, thank you for sharing. after 33 years of life hiding and compensating for my perceived differences, earlier this year a healthcare professional finally diagnosed me with AuDHD. i have always had several surprising standout skillsets with which, as an adult, i have been able to monetize in order to support myself. but i have also always struggled severely in a number of unexpected areas that have a noticeable impact on my daily life. the context my diagnosis provides has been full of healing and understanding. i can be proud of my unique abilities and also accepting of my unique limitations.

    it is super exciting to hear how another neurodivergent mind has learned to harness their gifts even amongst the obstacles. cheers!

    That bill would have completely destroyed the internet. Democrats and republicans alongside Hollywood faught the American people and lost. It’s the only time I’ve seen the people actually win, and pretty much every individual regardless of their other politics was united against it. It’s debatable if we could have done it without Google and the rest of big tech helping though. But still, it sent a clear message across the entire political spectrum that there was a line they couldn’t cross.

    We also briefly won Net Neutrality ( en.m.wikipedia.org/wiki/Net_neutrality ), and although it’s no longer in effect, the ISPs would have probably done a lot worse if they didn’t know we cared and are watching.

    Honestly though, I don’t know if stopping things from getting a lot worse should even count as an “improvement”.

    I agree, and for the most part C Gurra hasn’t really been this kind of figure for us In Sweden, but in the last few years he has made a speech to the nation at christmas, which I feel have started to bring the out the unifying figure we need.
